Attention! This is not a joke! You are going to eat your fingers!

These dumplings are served hot. Take one by the knot and make a careful bite, then suck the savory juice out of it. Once you are done with the juice, eat the rest but the knot. Continue to the next dumpling.

The most common filling for khinkali is meat - lamb or beef with an addition of cilantro. Optionally, you can spice it up with black pepper.

There are small restaurants in Georgia that specialize solely on khinkali. You can encounter one of those in other post-Soviet states.
